A long-aged cheese made to taste as if Gouda and Cheddar were combined...the buttery mellowness of a Gouda with a slight Cheddar sharp finish! A washed curd style cheese aged at least 7 months and sometimes over 12. Made with the milk from our pastured dairy cows and processed for us by Tulip Tree Creamery in Indianapolis, IN. Subject to availability.

Pairing: Bolder white wines (Savignon Blanc), almost all red wines, Chocolate & Crusty Bread. This cheese seriously pairs with almost everything.
