One of the newest offerings, this cheese is inspired by the Alpine-style cheese, Gruyere. This washed rind cheese is a semi-soft cheese with sweet and nutty flavors that become more complex as it matures. Aged 3-6 months. Made with the milk from our pastured dairy cows and processed for us by Tulip Tree Creamery in Indianapolis, IN. Subject to availability.
Pairings: Champagne, Cava, Sauvignon Blanc, Riesling, Pinot Noir, Merlot and Chianti Classico.
