Fox Glove is a double cream, washed rind cheese that has a soft consistency and earthy, more pungent flavors created by a mixture of cultures (yeast, salt & beer) applied on the distinctive reddish-colored rind. If you have trouble choosing between a Taleggio and Epoisses, this cheese may hit the spot. Made for us by Tulip Tree Creamery in Indianapolis, IN. Subject to availability.
Pairings: balances out anything sweet (wine, port, whiskey, chocolate, beer), pairs well with fruits, nuts, chutney's, jams, and on plain crusty bread.
