A chuck petite tender is a small, lean cut of beef from the shoulder of the cow. Naturally very soft even though it comes from a hard working muscle of the cow's shoulder. Similar to a filet mignon with that melt-in-your-mouth texture, but at a fraction of the price. It has a rich, bold beef flavor and is easy to cook. It can be roasted whole or slice into mini steaks (medallions). Best cooked to medium rare, season well before cooking and use a very hot grill or cast iron pan for best results.
